Israeli cuisine is infinitely complex and exciting, much like the country's history: it combines the essence of the Middle East with both ancient and modern Jewish cuisine, and finally adds the contributions of many immigrants. But what does this look like in practice? Compared to European cuisines, it uses less meat and more vegetables, with a more intense presence of dry and fresh herbs, and it doesn't necessarily think in terms of consecutive courses – rather, it focuses on cold and hot dishes that pair well together and can be enjoyed simultaneously. Oh, and yes, Israel is truly a street food country as well, and we'll be "taking that into account" tonight.
