Arabic cuisine is fantastic and incredibly diverse, even though this vast culinary tradition, spanning many countries and regions, shares several common elements. Today, we turn our attention to one of the Middle East’s young yet iconic countries: Jordan. The Nabataeans, Greeks, Romans, and Ottomans all left their mark on Jordan’s history and cultural heritage, not to mention the country’s rich biodiversity, which also influences its cuisine.
Tonight, however, we are moving beyond mezze—small bites and salads—and preparing a full-course feast. Our menu features a delicious soup, a remarkable appetizer, freshly baked pita, two exquisite chicken dishes, and a unique dessert.
