In Europe, more and more people are becoming vegan for the sake of sustainability, abandoning the holy trinity of meat, eggs, and dairy products on which Western culinary culture is built. It is much easier to be vegan further east and south from us: the arsenal of spices, legumes, vegetables, and fruits helps the people living there. This evening, we are taking a trip to India, where almost everyone is vegan for religious reasons. We will prepare a huge vegan thali platter with lots of great spices and vegetables, lentils, and of course, chili.
MENU
- Coconut vegetable curry
- Green beans & potato jalfrezi
- Bengal masoor dhal / Spicy red lentil soup
- Vegetable pulao rice
- Aloo paratha / Indian potato stuffed flatbread
- Tamarind - tomato chutney
