We will be cooking our guests' and the Chefparade staff's favorite Indian dishes. This is a great entry point into the universe of Indian cuisine and culture. We will learn what Indian curry truly is, which spices to toast and the methods to use, and then see how to adjust the consistency of the curry. We will prepare a staple Indian daily dish, dhal – this time, an East Indian, Bengali version. There will also be basmati rice as a side dish, fresh pita, and both a yogurt-based and a fruit-based accompaniment. And of course, we won't shy away from the fact that Indian cuisine is the world's most heavily spiced and ingredient-rich cuisine... we hope everyone loves it spicy!
